Victoria Day, yay!
Today is the day when we in Canadia celebrate the life of a long dead Queen from the Motherland, AKA Britannia. It is a day off work and a long weekend for wet camping, ill-advised drinking, and fireworks. That's what I love about the Canucks... any excuse for a party. So today, I'm celebrating with a Victoria Day cartoon from "Hark, A Vagrant" by one of my favourite comix artists who is also a fellow Canadian, Kate Beaton.
Queen Victoria got one thing right, anyway, and that was to arrange for her birthday to always fall on Meatless Monday. So convenient! Here's another few items worth celebrating:
- Care2 featured the many reasons MM is a great idea
- Dr. Joel Fuhrman shared some thoughts about healthy eating in this recent MM interview
- BBC News featured a recent study that showed a reduced risk from dying of cancer and heart disease in those eating 7 or more servings of fruits and veg per day - something that MM naturally helps us accomplish
This week's recipe has lots of veg and keeps it simple and delicious. Have a good Monday, even if there are no fireworks in the forecast where you are.
