Seena's Quick Fajitas
Ingredients

tbsp vegetable oil of choice
2
medium onions, sliced
1
yellow pepper, julienned
1
package beefless tips or strips – we like Gardein brand
½
cup water to de-glaze pan
¼
tsp cumin
¼
tsp garlic powder
½
tsp chili powder
1
tbsp hot sauce - we like Cholula brand
1
tbsp lemon juice
1
tsp agave nectar

grain wraps

Directions
Heat
oil in a large skillet over medium high heat. Add sliced onions and cook for 5
minutes, stirring occasionally. Push onions to the outside of the pan and add
the peppers to the middle and continue cooking for another 5 minutes, until
onions are beginning to brown. Set aside.
Using
same pan, fry beefless tips until browned on one side, then turn over until
browned on other side. Set aside beefless tips with onions and peppers.
Add
the water to the pan and use a wooden spoon to scrape up all the bits left from
the beefless tips and veggies (de-glaze the pan), still over medium heat. Then
add the cumin, garlic, chili, hot sauce, lemon juice and agave and stir until a
sauce-like consistency is reached. Return the onions, peppers and beefless tips
to the pan and stir until well-coated.
Lay
out whole grain wraps and spoon on some of the above mixture, topping with your
choice of dairy-free cheeze or sour cream, guacamole, salsa, etc. Serve with
brown rice.
