Pumpkin Walnut Gingerbread

For the pumpkin gingerbread:
1 cup canned pumpkin
3 tbsp pure maple syrup
¾ cup natural cane sugar
1/3 cup vegetable oil
¼ cup molasses
1 tbsp chia seeds
3 tbsp water
1 2/3 cups whole wheat pastry flour (or gluten-free cup-for-cup flour blend)
1 ¼ tsp baking soda
1 tbsp pumpkin pie spice (here's a great recipe for making your own)
1 tsp sea salt
1 tsp baking powder
½ cup chopped walnuts
