M is for Mushrooms

The "M" in Dr. Fuhrman's now famous G-BOMBS stands for Mushrooms and I love them so much, you could actually call MM "Mushroom Mondays" and I would be fine with that. They are ridiculously delicious as well as good for you:
  • Best Health Magazine did a great feature on the 5 Health Benefits of Mushrooms and then - KA-POW! - they just go right ahead and bust out 8 ways to cook with mushrooms
  • Not to be left behind in mushroom love, Reader's Digest came up with their favourite 3 Health Benefits of Mushrooms, including this zinger: "Researchers estimate that if you substitute mushrooms for ground meat in one meal every week, you can lose five pounds in a year." What did I just say? One day a week? Hello, whole new marketing campaign!
  • Of course Mushrooms Canada had to get on the bandwagon with their claim that mushrooms are the new superfood, seeing as they're chock full of essential nutrients, antioxidants, and fibre, which makes them great for cancer-fighting, immune support and weight management. Right on!
  • And we already know that Dr. Michael Greger loves them for breast-cancer fighting, because he sets them up in a Nutrition Facts prize fight in Breast Cancer vs. Mushrooms

So, given all of the above, would it surprise you to learn that this week's recipe is the culmination of 21 years of research into the most delicious Mushroom Soup recipes on the planet, resulting in another of Seena's recipe masterpieces? No? What gave it away? Anyway, when you're enjoying MM this week, think Mushroom Monday instead.
