Seena's Apple Fritter Cake
Ingredients

cups whole wheat pastry flour
1
cup sugar
½
cup quick oats
1
tsp baking soda
1
tsp ground cinnamon
¼
tsp salt
½
cup canola oil
½
cup applesauce
¼
cup water
1
tbsp vanilla extract
1
tbsp apple cider vinegar
½
cup chopped walnuts
3
Fuji apples, peeled and chopped
1½
cup powdered sugar
4
tablespoons coconut or other non-dairy milk
Directions
Preheat
oven to 350 degrees. Line bottom of a 9 x 13 inch square baking pan with
parchment paper and lightly grease.
In
a large bowl combine flour, sugar, baking soda, cinnamon, salt, and oats. In a
separate medium bowl, mix together oil, applesauce, water, vanilla, and
vinegar.
Pour
wet mixture into dry and stir until just combined. Fold in walnuts and chopped
apples. Press into pan and cook for 30-35 minutes, until top is browned and a toothpick inserted in the centre of the cake comes out clean.
Remove
cake from oven and set out on cooling rack. To prepare icing, sift powdered
sugar and combine with coconut milk in a medium bowl. Drizzle icing over warm cake. Serve warm
and refrigerate leftovers.
