Barley and Lentil Minestrone
Ingredients

onion, diced
150g
pearl barley, rinsed
100g
dried green lentils, rinsed
4
cups/1L veggie stock
2
cups/500ml water
1
tsp iodized salt
2
cloves garlic, minced
100g
green beans, trimmed and chopped
100g
cauliflower florets
400g
pumpkin, peeled, trimmed and diced
2
carrots, sliced
2
celery stalks, diced
100g
baby spinach
Extra
salt and pepper to taste
Directions
Place
all ingredients into a large stockpot. Bring to a boil, then reduce heat, cover
and simmer for 1 to 1½ hours. Check and
adjust seasoning.
