Farmers Market Time
With the beautiful weather here in Souwesto, our thoughts naturally turn to farmers market season. We happened to be downtown yesterday and got that old familiar feeling of excitement when we saw the white tents outside the Covent Garden Market. Not every booth is in operation, yet, but we saw fresh fruits, vegetables, baked goods, honey and many others up and running.
The market happened to be featuring nutrient-rich spinach and had samples of a really simple, delicious spinach salad. I am still barefoot this morning, as it knocked my socks off. Here is the recipe they handed out:
Summer Fresh Spinach Salad
- Spinach (baby leaves or chopped leaves with stems removed)
- Poppy seed dressing
- Sliced ripe strawberries
- Fresh local yellow bell peppers
- Creamy avocado
- Slivered Almonds to top it off (or choose walnuts or pistachios)
