Sweet Potato Muffins
Ingredients
1½
cups whole wheat pastry flour (or GF, all purpose, etc.)

tsp baking powder
1
tsp baking soda
2
tsp pumpkin pie spice
1
cup unsweetened applesauce
1
cup mashed sweet potato (or substitute pumpkin)
¾
cup light brown sugar
¼
cup maple syrup
Directions
Preheat
oven to 350°F. Grease or spray muffin tins.
In
a large mixing bowl, whisk together flour, baking powder, baking soda and
pumpkin spice until well combined. Add applesauce, sweet potato, sugar and
maple syrup, then stir until just combined. Add dried cranberries or chopped
nuts at this point if you like.
Measure
out batter equally into muffin tins. Bake for 18 to 25 minutes until a
toothpick comes out clean.
