Lazy Lentil Soup
Ingredients
1¾
cups red lentils, rinsed
1
cup diced onion
1
cup diced carrot
1
tsp minced garlic
7
cups water (1¾ L)
Vegetable
bouillon powder or concentrate
-
Sufficient
for 7 cups, usually 3½ cubes
Directions
Rinse
lentils in a colander and then place in large soup pot along with all other
ingredients. Bring to a boil, stir and reduce heat to medium low. Cover and
simmer for 30 minutes or until vegetables are tender.
Puree with a hand blender
and serve with fresh whole grain bread.
