Raw Apple Pie
Ingredients
Filling:

peeled Royal Gala Apples, sliced thinly
1
lemon, juiced
2
tbsp ground cinnamon
2
tbsp maple syrup
½
tsp ground ginger
½
tsp ground nutmeg
Pie
Crust:
1
cup raw pecans
1
cup raw cashews
½
cup pitted honey dates
1
tsp vanilla extract
1
tsp ground cinnamon
½
tsp coconut oil
Topping:
¼
cup raw pecans
¼
cup cashews
¼
cup oat flakes
¼
cup dried cranberries
Directions
Soak
the pecans, cashews and dates in warm water for 20 minutes for the pie crust.
Slice
the apples with a mandolin or food processor and marinate them in the lemon
juice, cinnamon, nutmeg, ginger and maple syrup for 30 minutes.
Drain
the nuts and dates and combine in a food processor with the cinnamon and
vanilla. Pulse the mixture until finely crumbled and sticking together. Coat
the pie pan with coconut oil and then mold the pie crust to the bottom. Place
in the freezer for 20 minutes.
For
the topping, put pecans, cashews, oat flakes and cranberries into the food
processor and pulse until fine.
Drain
the excess liquid and then pour the pie filling into the frozen pie crust,
sprinkling the crumble topping over pie. Slice and serve.
