Seena's Monkey Treat Muffins
Ingredients

egg replacement – mix 1 tbsp ground flax seeds with 2 tbsp water

cups soy milk
1/3
cup vegetable oil (such as canola)
1/3
cup maple syrup or agave nectar
2½
cups whole wheat pastry flour

tbsp baking powder
½
tsp salt

tbsp ground ginger
1½
cups semi-sweet chocolate chips
½
cup chopped crystallized ginger
Directions
Preheat
oven to 375 degrees. Mix the ground flax and the water together and let stand
for 5 minutes while preparing batter. Grease 12 cup muffin tin (or coat cups
with cooking spray). Place a large paper baking cup in each section.
In
medium bowl, combine egg replacer, soy milk, oil and liquid sweetener. In
separate large mixing bowl, combine flour, baking powder, salt and ground
ginger. Stir in the chocolate chips and chopped ginger. Now add the wet
ingredient mixture and gently fold in to dry mixture until just blended. Do not
over stir.
Spoon
batter evenly into the muffin cups in your baking tin. Bake in centre of oven
for 15-20 minutes or until tops spring back when lightly touched. Makes 12
muffins – can be easily doubled.
