8oz whole wheat spaghetti
1 onion, finely chopped
2 tbsp corn or other vegetable oil
5 oz tomato juice
3 tbsp crunchy peanut butter
1 tsp marmite or soy sauce
1 green and 1 red sweet pepper, julienned
½ cup shelled peanuts
½ lemon, washed and sliced thin
Prepare the spaghetti according to package directions, then drain and set aside. While the pasta is boiling, fry the onion in the oil over medium heat until it is browned, about 5-7 minutes.
Stir in the tomato juice, peanut butter, marmite or soy sauce until well blended. Toss this mixture with the drained noodles until well coated. Now add the julienned peppers and leave in the pan until heated through.
Serve garnished with peanuts and lemon twists.
