Seena's Quick Shepherd's Pie
1 cup frozen corn
1 cup diced carrots
1 cup frozen peas
1 package of Yves Ground Round (or other meatless crumbles)
1 can of sliced mushrooms
1 package instant meatless gravy (onion or mushroom is good)
3-4 cups leftover mashed potatoes
Mix vegetables and ground meatless crumbles in baking dish with cover. Stir in mushrooms.
Prepare instant gravy as per package directions. Stir into mixture in baking dish and smooth over the top so it is flat.
Spread mashed potatoes across the top and sprinkle with some paprika. Bake in oven at 350 degrees for 1 hour or until gravy is bubbling up from underneath.
