Garden Goulash
Ingredients
1 tsp olive oil
1 medium onion, diced
1 small green bell pepper, diced
9 ounces Gardein Beefless Tips (or chopped veggie burger)
1 clove garlic, finely chopped
1 tsp paprika
1 (15 ounce) can stewed tomatoes
1/2 cup red wine
1/2 tsp dried oregano
1/2 tsp dried sweet basil
1 tbsp tomato puree
1 tsp sugar
Black pepper to taste
Directions
- Heat olive oil in a large skillet over medium heat, and saute the onion 5 minutes, until tender. Mix in the green pepper and Gardein, and saute another 5 minutes, until the pepper is tender. Mix in the garlic and paprika and stir for one minute.
- Mix in the tomatoes, wine, oregano, basil and tomato puree. Bring the mixture to a boil, stirring occasionally. Reduce heat to low and simmer 25 minutes, until thickened. Just before serving, stir in the sugar, and season with pepper.
- Serve over brown rice, whole grain pasta or quinoa.
