More Fruits and Veggies
A couple of great articles came out this week on how to get more fruits and veggies into our diets, so I thought I'd steer you in their direction. The first is a "Quick Guide" from the people at Complete Idiot's Guides. It has lots of great tips on how to add vegetables to things you are probably already doing. Our family favourites from this list would be: adding greens to our smoothies, adding chopped up raw broccoli to a salad (they do this at the Prince Albert Diner here in London and it is a Stella favourite) and putting out bean dip or guacamole to eat with chopped fresh veggies.
The other article is from a great online resource called "Fruits & Veggies - More Matters." The article to which I've linked is specifically about Meatless Mondays. They are not alone in listing these as the principal benefits of adopting MM: Helps your bottom line, benefits your health and is Earth Friendly. The site includes guides to shopping for fruits and veg, purchasing on a budget, how to add more to your families meals (similar to the above), meal planning advice and more. They also provide an easy recipe, which paradoxically includes chicken stock. If you swap that for vegetable stock and use wholegrain fettuccine noodles it would be a pretty good choice for a Monday dinner.
After dinner, you might feel like a really healthy and delicious dessert which included some of the great fruit you've been reading about above. In another feat of excellent timing and health proficiency, we are providing the recipe to which we alluded last week. This comes by way of loyal reader G.S. in London, who gave this fantastic recipe to another loyal reader, C.Y., also of London (a.k.a. my Mom), who made it for us one night a couple of weeks ago. After we put our socks back on and put our minds back inside our heads (knocked off and blown, respectively), I immediately requested this recipe to share with y'all.
