No Sufferin' Succotash


1 tsp paprika
1 cup low sodium vegetable broth
2 cups frozen or canned baby lima beans
2 cups frozen or canned cut green beans
2 cups frozen or canned corn kernels
1 medium leek (white and pale green part only) cut into 1/2 inch pieces
1 carrot, diced
1 red bell pepper, seeded and diced
1 tsp cornstarch dissolved in 1 tbsp cold water
freshly-ground black pepper to taste


Bring broth and paprika to a boil 
in a medium saucepan. Place the lima beans, green beans and corn in the broth. Reduce heat to medium-low and simmer for 10 minutes. Add the leek, carrot and red pepper and simmer 5 minutes more. Remove the cover and stir in the dissolved cornstarch. Cook over high heat for 4-5 minutes, stirring until the liquid is reduced and thickened. Taste for salt and pepper and serve immediately.
