Avocado, Corn and Red Pepper Salad


1 Tbsp Olive Oil
1 Tbsp Lemon Juice
1 Tbsp Dijon mustard
1/4 Tsp Pepper
1 Red Bell Pepper, chopped
3/4 cup corn kernels
1/2 cup chopped Red Onion
1 Avocado, peeled and chopped
2 Tbsp chopped cilantro
Pinch of Sea Salt


Mix oil, lemon juice, mustard and pepper in a glass measuring cup. Mix red pepper, corn and red onion in medium-sized mixing bowl. Pour dressing over mixture and toss well. Add Avocado and toss lightly. Garnish with cilantro and sprinkle top with pinch of sea salt. Serve immediately.

Optional: serve on a bed of baby spinach or mixed greens.


  1. Sounds good! I'm going to try this one. I may reduce the amount of red onion though, the rest of my family doesn't appreciate raw onion like I do.
