Seena's Vegetarian Pate du Quebec
Ingredients
½ cup coarsely ground sunflower seeds
1 large sweet potato, grated (raw)
2-3 carrots, grated
1 large onion, grated
2 T lemon juice
1 T low sodium soy sauce
¾ cup whole grain flour of choice
1 cup nutritional yeast flakes
½ t ea. thyme, basil, sage, tarragon
Directions
For the onion, potato, carrots & sunflower seeds, just pulse in a food processor (if you have one) with the regular blade. Mix everything together in a bowl. If the mixture is too dry add a little hot water. Press into an oiled 8 x 8 pan and bake for 1 hour at 350˚.
Recipe works well doubled and quadrupled.
What? No picture? Can I ask what this dish most resembles and tastes like? Is it similar to a nut roast?

It has more of a pate like texture and a bit of the same flavour due to the sunflower seeds. Sorry, we never seem to have pictures. We should start doing that, definitely.
