Meatless Mondays - As You "Leek" It
Due to unforeseen circumstances (namely Season One of "The Vampire Diaries" and a bathroom reno project that is taking over the house), this recipe is very late in getting to you. If not for the timely intervention of a helpful reader from Milton, Ontario who generously provided me with this week's recipe, I wouldn't have been able to send this out at all.
This week's vegetable of the week is the Honey-do. If you're wondering about the spelling, it is not the delicious vitamin-packed melon to which I refer, but the ever popular list given by one spouse to another. Mine included installing a light and a bathroom cabinet, as well as a shopping trip to not one, not two, but all three of the major building supply stores here in London.
But I digress. In all seriousness, the VOTW is the lovely leek. Not only are they packing a whopping 7% of your daily requirement for manganese, they are from the same family as onions and garlic, which are rich in flavonoids and great for cardiovascular health. Hope you find this soup to your "leeking." (Please forgive the puns... I am light-headed from all the manual labour.)
