El Fasto Pilaf


2 cups low sodium, tomato-based garden cocktail
1/2 cup water
2 cups Whole Grain Brown Minute Rice
1 tbsp chili powder
1 tsp oregano
1 cup frozen corn
1 cup frozen peas
1 can low sodium black beans, drained and rinsed
2 green onions, diced


Combine all ingredients up to corn in one pot. Bring to boil and then simmer seven minutes. Add peas and beans to pot, stir and cover for five minutes. Sprinkle with diced green onions and serve.
